These sustainable beekeepers craft a finer alternative to highly processed and blended commercial honey, made with bee welfare in mind. Like a fine wine or oil, each of their raw, single-source honey varieties has its own distinct and characterful flavour, determined by the seasonal plants and local environment the bees explore.
The Bermondsey Street Bees approach to beekeeping keeps things traditional. They use artisanal production methods, hand extraction and cold filtering, which is why their final product is full of rich flavours and nutrients.
Many of their bees are part of apiaries on rewilded land in London’s far Docklands, where they can forage without negatively impacting wild pollinators. Nonetheless, to help minimise the impact of urban beekeeping on wild bees, Bermondsey Street Bees have also been moving bees out of the capital and into the Essex countryside. Every decision is based on what’s best for bees.
Bermondsey Street Bees also give back to help bees too. They lend time, data and resources to global bee research; raise money for training future beekeepers; advise on planting initiatives to feed honeybees and wild pollinators; and donate to bee charities.

Beekeeping started as a hobby for partners Dale Gibson and Sarah Wyndham Lewis, quickly turning into an obsession and then a business. They produced their first artisan honey in London Docklands back in 2007 and scooped a “Best Honey in London’ award in 2011, leading them to embrace life as full-time beekeepers.
The duo are now top honey and bee aficionados. Dale heads up the Bermondsey Street Bees apiaries and consultancy as well as writing and speaking widely on sustainable beekeeping in urban and rural settings.
As a trained honey sommelier, Sarah leads training and raw honey tastings for chefs, bartenders and others in the food and drink industry. She’s also a professional writer and penned Planting for Honeybees, if you’re after tips for being a bee-friendly gardener.
